The truth of Ruby’s Hush Puppies

During a Kemper Forestry Meeting in 2017, several people at our table mentioned these were the best hush puppies they have ever had. After the meeting, while cleaning up the kitchen, I asked Ruby (Rankin) if she had made the hush puppies.

She told me she had created the recipe and was happy to give it to me. I have used it many times since and decided it was time to publish it for everyone.

Ruby Rankin's Hush Puppies

1 part Flour

2 parts cornmeal

1/2 part Jiffy cornmeal

Egg

Onion

Cream Style Corn

Kate's Tips: Mix dry ingredients in quantity, like one cup equals one part.

Mix 1 cup flour, 2 cups cornmeal and 1/2 cup Jiffy cornmeal. Store in the freezer in a zip lock bag. When I make hush puppies for 2, I use one egg and a small amount of onion. Pour in cream corn and dry ingredients alter­nately until you get the desired consistency. For a large group, just increase all portions.
