You don’t have to dread leftover meals

Leftovers!!

We all struggle with them. It's too much to throw out, but no one wants them again. This is where we have to become creative. We have to transform them into another dish so our love ones will eat them.

 As with everything else, a healthy lifestyle takes planning and moderation.

Here are some examples.

 Chicken Pot Pie

Take leftover chicken, strip it from the bone and chop into small pieces. Melt some butter in a pan. Stir in flour and seasonings.

Stir in some heavy cream to make a white sauce. Add chicken and a bag of mixed vegetables. Put in a casserole dish. Top with Carb-Quick biscuits. Bake at 350 degrees until biscuits are golden.

Left Over Soup

Cut left over beef into small pieces. (This works with steaks, roast, ribs, hamburgers, either beef or venison.). Saute' minced garlic, chopped onion and chopped pepper in butter. Add meat, 2 cans of diced tomatoes, 1 can of tomato soup. Throw in any vegetables you have left over, broccoli, peas, carrots, cabbage, Brussel sprouts, cauliflower, even cauliflower rice or mashed.

Stir well and heat through.

Great with grilled cheese sandwiches.

Ham Casserole

Chop your left over ham into small pieces. Make a cheese sauce. Stir in left over broccoli and/or cauliflower and meat. Cover with cheese. Bake until cheese melts and is heated through.

Leftover Lasagna

Take hamburgers and crumble and make a marinara sauce or you can use leftover meat sauce. Make a cheese sauce using cream cheese, ricotta cheese, fiestas cheese, parmesan cheese and mozzarella cheese. Slice thin slices of zucchini.

Place a layer of meat sauce, then cheese, then zucchini noodles. Repeat at least twice. Top with mozzarella cheese.

 Cook at 350 degrees until bubbly and heated through.

Trifle

Take your left over fruit and macerate in artificial sweetner.. Make 2 large boxes of sugar free pudding. Take a sugar free cake or Angel feed cake and tear it into small pieces. Put a layer of cake in the bottom of the bowl. Cover with fruit and juice. Add the layer of pudding. Add a layer of sugar free cool whip. Repeat layers twice. Scatter fruit over top layer.
