Sugar free cookies ease summer hunger pains

What is it about being home that gets your mouth watering and stomach rumbling

You may have just eaten, and let someone walk by with a cookie and suddenly you are hungry again.

Well, with planning, you can sharpen your baking skills and have plenty of choices of sugar freecookies for you to eat. Just remember to plan and exercise moderation. 

 

Sugar free oatmeal cookies        

1 c. whole wheat flour

1 c. oatmeal

1 tsp. cinnamon

1 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. nutmeg

1/4 tsp. allspice

1/4 tsp. ground cloves

1/2 c. raisins

1 c. unsweetened applesauce

1/4 c. water

1/3 c. vegetable oil

2 eggs

1 tsp. vanilla

1/4 c. nuts (chopped fine)

Combine all ingredients in mixing bowl. Mix well. Drop by teaspoonful onto lightly oiled baking sheet. Bake at 375°F for 10 to 15 minutes or until browned. Yields about 4 dozen.

 

Sugar free peanut butter cookies              

1/2 c. butter

1/2 c. natural peanut butter

1 egg, slightly beaten

1/3 c. sugar-free maple syrup

1 tsp. vanilla

1 tbsp. liquid sweetener

1 2/3 c. flour

1/2 tsp. baking powder

Mix dry ingredients, mix all others in order listed. Combine all ingredients. Roll one teaspoonful of dough into a ball, place on greased cookie sheet, flatten with a fork dipped in flour....continue until all dough is used. Bake in 350 degree oven for 8-10 minutes. Do not overbake.
