Hobo food pacts make for good fall meal

Since we're able to enjoy being outside without having a heat stroke, we are trying to find ways to stay outside.

We can use the fire in our fire pitts to make supper. Making hobo packets is an easy. You take your choice of meat (steak, pork chop, chicken breast). Put your regular spices on both sides of the meat and put it in the middle if a piece of aluminum foil that as been sprayed with cooking oil.

Next, rough cut out desired vegetables (potatoes, sweet potatoes, carrots, squash, Brussels sprouts, peppers, onion) and place them on top of the meat. Sprinkle with salt and pepper. Top with 2 pats of butter and fold up the foil to seal. cook in coals of the fire for 30-45 minutes until the meat is done.

Of course, you can choose to bake a potato or sweet potato in your coals and serve with a nice salad for supper. Using th hobo method, you can cut your meats and vegetables for Shish kabobs, toss them in olive oil and seasoning, them seal them in foil and cook in the coals.

When planning for a outside cooking time, just remember that a healthy lifestyle takes planning and moderation.

 

Grilled Pork Chops

 Pork chops

1 pkg. Italian dressing mix, prepared

 1 pkg. meat marinade, prepared

1 tbsp. lemon juice

1/2 tsp. garlic powder

 

Mix prepared Italian dressing and meat marinade mix. Add lemon juice and garlic powder. Marinate pork chops in this mixture overnight. Grill over coals.

 

Grilled Marinded Chicken

1-2 lbs. skinless, boneless chicken, or shrimp or tenderloin steak

MARINADE: 3 tbsp. soy sauce 1/2 c. water 1 tbsp. honey 1 green onion, chopped 1 tsp. lime juice 1 tbsp. white wine or sherry Mix all marinade ingredients in a large shallow dish. Add boneless chicken breasts or meat of choice. Toss lightly to cover. Cover dish tightly and refrigerate for 2-6 hours. Remove meat from marinade and cook on heated grill or broil.

GRILLED STEAK MARINADE 1/4 c. olive oil 1/4 c. soy sauce 1 tsp. lemon pepper seasoning 1 tsp. garlic powder Mix together. Marinate 2-3 hours. Then cook to order.
