Good use of leftovers makes for tasty holiday meals

Christmas time is so wonderful!

It may be a little different this year necause of the COVID-19 pandemic. But usually, we have exceptional food and get to visit with friends and family.

After all the feasting is over, we are left with mounds of leftovers. What do you do with them? Well with planning and creativity, we can use them in such a way that your family doesn't even realize they're eating leftovers.

 

STIR FRY VEGETABLE TRAY

Left over vegetables

chopped onions

chopped bell peppers (mixed colors)

minced garlic

chopped turkey or ham

SAUCE

2 cloves garlic, minced

1 tablespoon fresh ginger, chopped fine

1 teaspoon sesame oil

2 tablespoons rice vinegar

1/4 cup soy sauce

1/4 cup chicken broth

1 tablespoon Splenda brown sugar

2 tablespoons Splenda

1 tablespoon cornstarch

 

Combine sauce ingredients in a plastic container, cover, and shake. Chop all vegetables (broccoli, cauliflower, celery, carrots, cherry tomatoes) into bite sized pieces. Cut tomatoes into quarters. Add olive oil into bottom of hot wok. Sautee onions, peppers, and garlic. Add vegetables and stir until tender. Add meat and cook until heated through. When just done, add 1/2 to 2/3 of sauce, mix and let thicken slightly – about a minute and serve over cauliflower rice.

 

TURKEY VEGETABLE SOUP

turkey carcass

chicken broth

chopped onions

chopped bell pepper

minced garlic

leftover Brussels Sprouts. broccoli. string beans, carrots

leftover gravy

flour

milk

butter

salt and pepper

crushed tomatoes

1 can cream chicken soup

California blend vegetables

 

Boil turkey carcass in broth until it falls apart, adding liquid as needed. Remove bones. Sautee onions, pepper, and garlic in butter. add flour and make roux. Add milk and gravy, stir well. add this to turkey broth. Chop all leftovers into bite size pieces. Add to soup. Add California blend vegetables it needed. Stir in crushed tomatoes, soup, and seasonings. simmer one or two hours stiring occasionally to keep from sticking.

 

TURKEY OR HAM WRAP

Ranch dressing

cranberry sauce

sliced ham or turkey

shredded cheese

vegetables you like on your sandwiches\

Spread thin layer of ranch on wrap. Add a layer of cranberry sauce. Layer your meat and sprinkle with cheese. Toast if desired. Add vegetables you enjoy on your sandwich and roll into wrap. Serve with salad and low carb chips.

 TURKEY SHEPHERD'S PIE

Turkey

chopped onion

chopped pepper

chopped minced garlic

butter

flour

milk

gravy

leftover broccoli, carrots, green beans

shredded cheese mashed cauliflower

 

Sautee onions, peppers, and garlic in butter. and flour to make a roux. Add milk and gravy. Stir in meat and vegetables. Turn into a casserole dish. top with mounds of mashed cauliflower. Sprinkle with cheese. Bake at 350° until hot and bubbly.
