While we're staying safe by following social distancing rules, we have time to work on ourselves.

We can organize closets, cabinets, and drawers. We can purge those things we have collected and do not use. We can read books and write in our diaries or maybe even a story. We can organize all that paper clutter we tend to collect. We can create scrapbooks of all those pictures and memories we have collected in drawers.We can organize the recipes we have collected and clipped into booklets for easy use.

Here are some recipes we can add to your booklet. Just remember, a healthy lifestyle takes planning and moderation.



Salisbury Steaks

4 tbs butter

4 tbs olive oil

Small onion diced small

Mushrooms chopped

1/4 C CarbQuik

Salt and pepper to taste

1 lb ground meat

1 egg beaten



Combine meat, salt, pepper, and eggs. Good into patties and brown in a well sprayed skillet. Remove meat and set aside. Melt butter in skillet. Saute onions until tender and clear. Add mushrooms and cook. Add CarbQuik and stir until you have a dark roux. Salt and pepper to taste. Add combination of milk and beef broth until gravy in at desired consistency. Add meat and cook until meat is cooked through. Serve over mashed cauliflower.



Chicken Cacciatore

Boneless, skinless chicken thighs

4 tbs butter

4 tbs olive oil

Small onion diced small

Small bell pepper diced small

Minced garlic

3 tbs CarbQuik

2 tablespoons extra-virgin olive oil, or as needed

¼ cup tomato paste

½ cup dry white wine

¾ cup low-sodium chicken broth

salt and pepper to taste

¼ teaspoon white pepper

¼ teaspoon dried thyme

¼ teaspoon dried marjoram

1 bay leaf

1 (10 ounce) package sliced fresh mushrooms


Salt and pepper chicken and brown in butter and olive oil. Set aside. Saute vegetables in pan drippings until tender. Stir in mushrooms and cook. Add CarbQuik and stir until you have a medium roux. Add the rest of the ingredients and stir well. Add meat, cover , and cook until chicken in done. Serve over cauliflower rice.



Stoplight Pork Chops

Boneless pork chops

3 tsp olive oil

Salt and pepper to taste

Chopped red, green, and yellow peppers

Italian salad dressing

Season meat and brown in olive oil. Saute vegetables in pan dressing. Add meat and cover with Italian dressing. Stir well and cover skillet until pork chops are done. Serve with cauliflower rice.



Chicken Spaghetti
Rotisserie chicken shredded

1/4 C melted butter

3 tsp CarbQuik

Milk

Can rotell tomatoes

Can low fat cream chicken soup

Shredded fiesta, mozzarella, parmesan, and cream cheese

3 tsp olive oil

2 medium zucchini

1 small spaghetti squash



Cool spaghetti squash, cool, and shred noodles. Put zucchini through a capitalist and cook in olive oil until tender. Make a light roux with the butter and CarbQuik. Add milk, cream cheese, and stir until cheese is melted. Add in cheeses, tomatoes, soup, chicken, and noodles and stir well. Turn into a sprayed casserole dish, too with cheese and cook at 350° until cheese is melted and bubbly.
