Low carb meals that will keep you out of hot kitchen

During the summer, no one likes to be stuck in the kitchen all day.

It can be hot and miserable. You want to be out with your family having fun and you need some quick meal ideas. You need ideas that get you out of the kitchen.

 This can be done, and you can stay with your low carb diet. It takes planning and preparation.

One of the easiest idea is to fix a hobo meal.  Pre heat oven at 375°. Slice your choice of vegetables into about 1/4 to 1/3 inch slices. Toss in salt and pepper. Set aside.

Take a piece of aluminum foil and spray it with cooking spray. Place a piece of meat in the center and lightly season with salt and pepper. Later vegetables on top of meat and add 2 pays butter on top of mound. Wrap foil around food tightly. Bake at 375° until meat is done.

The beauty of this meal is you can use a variety of meats. You can use steak, pork chops, chicken breast or thighs, any kind of fish, even deer. For the vegetables you can again get creative. You can use carrots, any different squash, cauliflower, broccoli, onions, peppers, Brussel sprouts, asparagus, cabbage, tomato, any vegetable you enjoy. Every combination makes a new and unique meal. You can Taylor it to each family member's preferences.

One of the best things is, you can prep most of your vegetables on the weekend and store until your ready for meal preparation. Quick, easy, versatile.

Serve with a nice summer salad and your favorite beverage. You in and out of the kitchen quickly and clean up is even easier. You throw out the foil and your done.

Remember, with cooking, as with life, your creativity sets the limits. Experiment with spices, different meats, different vegetables. Let your taste buds be your guide. Have fun. Enjoy yourself. Let your children help. Make cooking family time. Most of all, have fun.
